Our recipe rating journey is approaching its climax! The 16 hour dishes are the penultimate duration to feature, with the 1 day offerings to close us out in a fortnight.
In total there are 29 recipes of 16 hour length have honoured us with their presence in the game. Of these all but three are still fully active - the Toad in a Hole (Basic Oven) and Pudding with Currants (Basic Oven) are both removed foods and the Egg Bread (Egg Stove) is situated on a removed appliance.

So there has never been a 16 hour goal recipe. It is the only duration to feature in the recipe ratings not to have had a goal dish - TeamLava should definitely fix that for completeness!
Starting with the most influential factor, namely profit, we have a clear winner. The County Fried Steak (Basic Stove) yields a hefty 9,010 coins of profit for every batch.

This is a big return, and the steak also performs well in the other variables. But sticking to profit, the steak is the perfect recipe to cook if you're looking to maximise profit and are not around for a full day. You'll obviously only be utilising 16 of the 24 hours of the day, but even then there's no better way to cash in.
In fact the profit of the steak is an enormous 1,000 coins more than the next best in the duration, with the Rack of Lamb (Basic Oven) itself well ahead of the third placed dish.

As well as being strong for profit, the lamb is the alpha-dish for XP gain. Together these ensure that the lamb pips the steak into the provisional top spot overall, with an impressive rating of 8.6. However, unlike the County Fried Steak, it's killer stat doesn't make it an optimum choice for a day away - there's a 1 day food which provides more XP, but you'll have to wait for a couple of weeks for more on that!
And the Rack of Lamb's XP isn't miles ahead of the second placed Tuna Melt (Basic Stove).

Unlocked at level 56, the Tuna Melt is another formidable contender, with high scores in all the greater weighted categories. This is enough to see it leapfrog the County Fried Steak overall, but not the Rack of Lamb, which remains set for a position in the Hall of Fame.
But we're not finished just yet. Because all of the featured recipes thus far are only in the green for portions. And that means that there is a dish out there which trumps them all...

The BBQ Chicken (Basic Grill) is a monster when it comes to portions. There is no other food in the game which yields as many portions per batch, not even any of the 1 day options. Therefore the BBQ Chicken is the perfect recipe to cook if you're struggling to keep the counters stocked and can't check in regularly throughout the day to serve up some of the higher portions per hour dishes (which are all much shorter in length).
However, note that the BBQ Chicken is in the red for profit per plate. This is a consequence of it offering only 2 coins per plate, and means that although it will populate the counters well, it will not boost your coin balance effectively at all. Even with full marks for profit per plate, the overall rating of the BBQ Chicken would still fall short of the previous three recipes covered.
And with that last assault on the summit by the BBQ Chicken, we can conclude that the best all-rounder in the 16 hour bracket is the Rack of Lamb. It has deservedly earned its place in the Recipe Hall of Fame.
