It's recipe rating time, and this week's edition will be a short one.
That's because we're covering the 7 hour dishes, of which there are only 11 from close to 400 in total. And of these four are goal recipes so won't be accessible to a lot of players.

So what's what with the recipes themselves then? Well the table topper for both profit and portions is the Pork and Persimmons (Basic Stove). Here's it's scores:

It's a sensational performer, with perfect tens across all three of the major factors and consequently a glittering 9.4 overall. This is not only the highest rating of any 7 hour dish, but the highest rating of any food in the game, past or present. Of course we can't read too much into that since the ratings are based off comparisons with recipes of the same length only, but it's still a nice title to hold.
Much like with the 6 hour efforts, the profit and portion numbers are directly related since every dish gives the same coins per plate. Hence the outstanding portion rating for the pork means an outstanding profit rating too. The second best offering in both departments is the Airline Lunch (Basic Stove):

A similar outlook to the pork here, with another impressive overall rating. Indeed the score of 9.2 ties for the second highest of all dishes. The one place where the Airline Lunch loses ground on the pork is with regards to XP. However there's only a 4 XP difference between the two so I wouldn't take this too seriously. At the end of the day both are excellent recipes.
Sticking with the topic of XP gain, despite netting a purple above, the Pork and Persimmons isn't the leader for the factor. That standing belongs to the Flower Salad (Basic Stove) with 131 XP. Here's how it rates across the board:

Again it's a favourable result, with the salad doing solidly on profit and portions. It is the fourth best in each of these variables - for completeness I should add that the Cowboy Quesadillas (Cowboy Stove) are third for profit and portions.
The salad, pork and Airline Lunch are a country mile ahead of the other contenders when it comes to XP - no other dishes manage to make it into triple figures. Indeed they're all worthy recipes, but it's the Pork and Persimmons which slots into the Recipe Hall of Fame.
With the main analysis already done, let's take a peek at how the leading 7 hour foods cope when lumped in with their near neighbours - the 6 and 8 hour dishes. We'll do this by comparing the profit, portions and XP gain per hour.
For profit and portions, the best the 7 hour bracket can offer is the pork's 514 coins per hour. This is well down on a fair few 6 and 8 hour recipes, with the Kiwi & Cake (Basic Oven) topping out at 905 coins per hour. The outlook is better for XP, with the Flower Salad only beaten by three dishes, the best of which is of course the Technicolor Cake (Basic Oven) whose tremendous XP gain has already earned it a seat in the Hall of Fame.
