In the latest recipe ratings post, it's the 3 hour dishes which are going under the microscope, with the recipe garnering the best ratings being inducted into the Recipe Hall of Fame.
Unlike the 1 and 2 hour durations, the 3 hour recipes are few and far between, with only 23 dishes in the duration, 20 of which are currently available to cook if you have completed all the previous goals. However if we don't count recipes on goal or removed appliances, then this drops to just seven!

Why are there so much fewer 3 hour foods? It seems the game's developers prefer the neatness of even numbers since there are also only a sprinkling of 5, 7 and 9 hour recipes. Personally I'd have liked a more even spread of the dish durations, but that's a discussion for another day...
Pressing on with matter in hand, what was already set to be a shorter recipe rating analysis is about to become even shorter still. That's because the top 3 hour recipe is very clear:

Added recently, the Cheese Spread (Basic Stove) has the highest overall rating of any dish the game has ever seen. It gets tens almost right across the board. Not only does it offer the best profit, XP gain and portions of any recipe in its category, but it also blows away the opposition for each of these factors. Its profit per plate is actually the sixth highest, but is close enough to the leader in this field, the Chocolate Milk (Drink Machine), to still earn a ten.
The only variable that prevents the spread from achieving the unthinkable of scoring perfect tens is a low availability rating. Unlocked at level 70, it is one of the very last recipes to gain access to, but is worth waiting for.
Since the Cheese Spread is so strong, it's worth comparing it to recipes of all durations. Looking only on a per hour basis, it's still pretty good. Regarding profit, five recipes of longer length yield more profit per hour, while only seven give more portions per hour. And for XP, there is no longer duration dish that betters the spread. There are plenty of recipes of length less than 3 hours which trump the spread across all three factors, but you obviously can't cook these through the night! We also have to be wary of this with the spread.
So we've justified the Cheese Spread's superiority. But looking further afield, which 3 hour recipes are still decent, but more accessible to lower level players? Well the Fruit Kebabs (Vegan Stove) have an overall rating of 8.4, making it the second best dish.
Before the arrival of the Cheese Spread, the Fruit Kebabs was the leading recipe across the main three variables, but has obviously suffered since the spread was introduced. However unlike the spread, it doesn't perform significantly better than the recipes immediately below it in the league table.
The advantage the kebabs have is that they are unlocked at level 52, much sooner than the spread. But this is still not that soon. We can do better, courtesy of the Bruschetta (Basic Oven) which is available from level 31, although it comes home with an overall rating of 7.0, quite a bit down on the kebabs. For true availability, we should look no further than the Heart Pizza (Basic Oven):
So for a well-rounded overall performance, you should look to unlock this pizza pronto at level 12. But is that true? The second poorest XP gain among 3 hour recipes really drags this one down, and at level 12 you're probably looking for more XP thrust. So I recommend the next best overall dish, the Cheeseburgers (Basic Grill), instead:
One of the initial Basic Grill recipes, the Cheeseburgers rate a little lower generally than the Heart Pizza, but at least you get a fine XP gain - it's actually the fourth highest of all 3 hour dishes!
So in summary, if you're after a 3 hour recipe with a good all-round showing then the strategy should be as follows: get to level 10 to unlock the Cheeseburgers, convert to Bruschetta at level 31 and then to Fruit Kebabs at level 52, and finally go crazy with the sensational Cheese Spread from level 70.
